Recipe for pudding of Zapajos Italianos

In a frying pan, add oil, onions, shredded carrots, green or red peppers, mushrooms, herbs, one leaf of laurel, garlic, salt and pepper, many zucchinis cut in large cubes and cook for about an hour. Add shredded cheese, 3-4 eggs, bread crumbs and mix thoroughly. Heat the oven and put some butter in a dish. Pour the mixture and add more cheese (parmesan or swiss) on the top. Bake until golden !
